Savory Mushroom Quiche Recipe
A rich, creamy quiche that lets your farm-fresh mushrooms shine. Use either oyster or lion’s mane mushrooms—fresh or dehydrated—and add your own savory mushroom seasoning for a flavor-packed dish.
Ingredients
For the Pie Crust (Homemade)
1 ¼ cups all-purpose flour
½ tsp salt
½ cup (1 stick) cold unsalted butter, cut into cubes
3–4 tbsp ice water
Or use 1 store-bought 9-inch pie crust (regular or deep dish).
For the Filling
1 tbsp olive oil or butter
1 cup oyster or lion’s mane mushrooms, chopped (or ½ cup dehydrated mushrooms, rehydrated in warm water for 20 minutes and drained)
½ medium onion, diced
1 garlic clove, minced
1 tsp of your savory mushroom seasoning
Veggies like spinach, kale or tomatoes
Bacon or sausage
4 large eggs
1 cup whole milk or half-and-half
1 cup shredded cheese (Swiss, Gruyère, or cheddar work well)
Salt and pepper to taste
Instructions
1. Make the Crust (if using homemade)
In a bowl, whisk flour and salt.
Cut in the cold butter until mixture looks like coarse crumbs.
Add ice water, 1 tbsp at a time, mixing until dough holds together.
Shape into a disk, wrap, and chill for 30 minutes.
Roll out and press into a 9-inch pie dish. Prick bottom with a fork and pre-bake at 375°F (190°C) for 8 minutes. Set aside.
2. Prepare the Filling
If using bacon or sausage, cook these first in a hot skillet. Remove from skillet into a separate dish. Then cook the mushrooms in the sausage or bacon grease ;)
Heat pan to medium heat. Add chopped mushrooms, saute till golden brown, salt lightly. Remove from heat and set aside into a separate dish to cool.
Add cooking oil or butter to a medium hot skillet. Sauté onions until soft, about 3–4 minutes.
Stir in your savory mushroom seasoning. Remove from heat and let cool slightly.
3. Mix the Egg Base
In a bowl, whisk eggs, milk, salt, and pepper. Stir in shredded cheese.
4. Assemble the Quiche
Pour the egg and cheese mixture into the crust. Add (cooled*) sautéed mushrooms, onions and garlic. It is important that the mushrooms, onions and garlic are not hot going into the egg mixture or it will start to cook the eggs.
5. Bake
Bake at 375°F (190°C) for 35–40 minutes, or until the center is set and lightly golden.
Let cool for 10 minutes before slicing.
